Is it possible that a pattern of online behavior on an insurer web site is a suitable proxy for predicting the purchase of life insurance instead of demographic characteristics and prior purchases?

There has been a lot of work done on using online behavior as indicators of "customer intent". So I expect that it would apply in the insurance market. One company, Navistone, is using the online behavior to deliver custom content.

The only way to find out is to use a predictive analytics engine that measure conversions AND demographics. They all will contribute, so the question is not "instead of", but rather "with". GreenRope is a CRM with this capability built into it.
